Let’s make this even harder by being picky

Most of these recipes will be vegetarian and light on dairy. I like dairy. It just doesn’t like me back. Unrequited love is a terrible thing.

I try to avoid anything that contains Stevia. Call it a leaf extract all you like, the aftertaste is terrible.

Excluding dairy and Stevia really limits my options in terms of store-bought products. I enjoy cooking though and am hoping to cook most of my liquids and soft foods from scratch. I have an Instant Pot, which is great for cooking vegetables down to mush.

During my recovery, I can’t eat or drink anything too hot or too cold, so ice cream and smoothies are out and lukewarm soup is in. yay.

I also can’t drink through a straw, but I rarely do that anyways. I’m mostly scared I’ll forget this rule.

Trying to create a balanced diet that’s entirely liquid and soft foods is going to be challenging, but coming up with a plan helps me not feel nervous about the upcoming surgery. I have about a month and a half to create some kind of menu for breakfast, lunch, and dinner. I’ll need at least two days of packable “food” to take to the office.

I don’t need a different dish for every meal, but I’d like to have more variety than what’s in the photo below. That’s why it’s my logo. It’s motivation.
